{VEGAN} Coconut Ice Cream

Hi ya'll + Happy spring! Spring is in FULL swing, blessing Oregon with 80 degree weather and sunshine. Over the moon excited is an understatement. Sweet sunshine is a perfect excuse for ice cream season!

If I told you that you could have healthy ice cream for dinner or breakfast would you? I'll answer for you: Heck ya!

Unfortunately, I was so excited to share this recipe that I was very impatient in terms of photographing it: aka it looks like slush. Buuutt, I promise it is yummy ice cream OR a slushi if you are like me. And who doesn't love a good slushi?

Coconut Ice Cream


  •  1 cup coconut milk (canned)
  • 1 cup milk of choice (I use almond)
  • 1/4 cup sweetener of choice (I use maple syrup)
  • 1 tsp vanilla 
  • 1 pinch salt
  • Toppings as desired 


  • Place all your ingredients in the blender + mix them. Serve after 6 hours in the freezer.
