Lemon Blueberry Coconut Oats
Spring is in the air, and that means I can start making lemon EVERYTHING. I love lemon flavored anything -- from chicken, to desert, to drinks; you name it and if it has lemon in it, I'll probably love it.
I also love the simplicity and quickness of overnight oats. I mean seriously, you throw minimal or a ton of ingredients in a bowl, and then put it in the fridge and you have breakfast made for three days.
I was driving back from a road trip to San Francisco, and I was just craving lemon. So why not combine lemon and overnight oats? Lemon Blueberry Coconut Overnight Oats. Can you say yum?
- one cup oats
- 1 cup almond milk
- 1/4 cup blueberries
- 1/4 coconut shreds
- 1 tsp vanilla extract
- zest from 1 lemon
- Add all your ingredients to a bowl, stir, cover, and let sit in the fridge overnight.
- That's it? Heck yeah!
