{VEGAN} Banana Chocolate Waffles

Hi all and happy new year! 

I hope everyone enjoyed their holiday with their families and started 2018 off well. I got to spend some much needed quality time in Virginia with my family. I am just getting out of winter break mode, and I am feeling more and more motivated to cook food that isn't my typical go to (aka a one pan Mexican flavored cluster of veggies). 

Today we had off, so I took complete advantage to make some yummy breakfast foods. I used to love waking up on the weekends and smelling bacon on the skillet or pancakes, so I tried to do the same this morning.

I love love love waffles and toppings. Naturally I had to try to make a vegan friendly recipe (that can also be gluten free). It was the perfect "weekend" feeling dish with the absolute best blends of flavor.


  • 1 cup flour (you can use almond flour to make this gluten free)
  • 1 cup milk of choice, I always go with Vanilla Almond Milk (unsweetened) for that extra sweet flavor
  • 2 tbs baking powder (you can substitute this with 1 tbs baking soda and 1 tbs cream of tartar)
  • 1/4 cup oats (instant oaks are okay)
  • 1/4 tsp salt
  • 1 flax egg (1 tbs flax meal, and 2 tbs water)
  • 2 bananas
  • 1/4 cup chocolate chips (I use dark chocolate chips that are 97% cacao) 


  • Mix all your ingredients into a mixing bowl and blend them until consistency you desire
  • Power up your skillet of your choice (I used a small waffle maker)
  • Cook each side for about 3 1/2 minutes each
    • Your edges should look browned and crispy
