{VEGAN} Stuffed French Toast

Hey guys and happy Thursday! 


I am definitely am a breakfast kind of girl, especially when french toast is involved. I never get the opportunity to eat french toast because it is always filled with unnecessary calories that I would rather drink beer for. But.. What if I told you that there was a way to make french toast healthy and vegan?

I know. I was just as amazed as you are. This french toast recipe was to die for, and I would make it again and again on Sunday morning's for my friends.


  1. Bread (I used french bread), sliced
  2. Two big bananas, sliced
  3. 1/2 tbs cup brown sugar (I used organic)
  4. 1 1/2 tsp vanilla extract
  5. 3/4 cup almond milk
  6. 2 cups chopped strawberries
  7. 1/2 vegan cream cheese
  8. 1/2 pecans, chopped


  1. Add: bananas, brown sugar, vanilla, and almond milk to a blender and blend until it is lump free. Put to side.
  2. Add strawberries, cream cheese, and pecans to blender, and pulse until it is a chunky cream cheese.
  3. Turn skillet to medium-high
  4. Grab two pieces of bread and spread the strawberry cream cheese all the way to the edges then put the two pieces together and squish together
  5. Dunk the french toast in the banana batter and place on skillet
  6. Let cook for 6 minutes on each side, or until brown and crispy.
  7. Add some maple syrup for dipping.
